The more mushrooms are studied, the more medicinal value is found. All mushrooms are medicinal, including the grocery store variety. All mushrooms contain beta-glucans, bound to chitin, in their cell walls, so longer cooking tends to make it easier for our bodies to absorb them. Mushroom beta-glucans tone the immune system, allowing it to better recognize invaders and attack them. Many mushrooms also have other medicinal chemicals, like triterpenes, polyphenols, etc.
